Marinated Chicken Cutlets

DIRECTIONS

1. Make the marinade: In a small bowl, whisk together 1 tablespoon of the oil, garlic, vinegar, thyme, 1/2 tsp salt, and 1/4 tsp pepper. Add marinade to large Ziploc bag and add the chicken; shake to combine. Let marinate for at least 10 minutes, but the longer the better.

2. Remove chicken from marinade and grill until browned and cooked through, 2 to 3 minutes per side. Remove from the grill. 

3. Serve chicken with my Oven Roasted Spring Vegetables.

1 tbsp olive oil

3 garlic cloves, minced

2 tbsp white wine vinegar

1.5 tbsp fresh thyme, chopped

½ tsp salt

¼ tsp pepper

1.5 lbs chicken cutlets

PREP TIME - 15 minutes

COOK TIME - 5 minutes

TOTAL TIME - 20 minutes

SERVES - 4
