Grilled Pork Tenderloin
DIRECTIONS
1. Combine the lemon zest, lemon juice, olive oil, shallots, rosemary, thyme & mustard in a ziplock bag.
2. Add the pork tenderloins and turn to coat. Try and marinate the tenderloins overnight but if in a pinch, refrigerate for at least a couple of hours. You are basically making a yummy vinaigrette to marinate your tenderloins. Experiment with different herbs for different flavor.
3. Remove tenderloins from marinade. Cook on grill for 15-20 minutes, turning frequently until internal temperature reads 140 degrees in the thickest part.
4. Remove from grill and let tenderloins rest for 10 minutes before slicing.
Tip: The marinade is great on chicken too!
INGREDIENTS
1 lemon, zest grated
½ cup freshly squeezed lemon juice (4-lemons)
⅓ cup olive oil
1 tablespoon minced shallots
2 teaspoons minced fresh rosemary leaves
2 teaspoons chopped fresh thyme leaves
1-2 teaspoons Dijon mustard
2 pork tenderloins
Freshly ground pepper and salt
