Mediterranean Farro Salad
DIRECTIONS
1. In a medium saucepan, combine 4 cups of water with the farro. Bring to a boil over high heat, then cover and simmer over medium heat until the farro is almost tender, about 20 minutes. Add 1 1/2 tsp of the oil and simmer until the farro is tender, about 10 minutes longer. Drain well. Transfer to large bowl and let cool.
2. Meanwhile, bring a medium pot of salted water to a boil over high heat. Add the green beans, stir, and cook for 2 minutes. Drain the green beans, then transfer to a bowl of ice water. Let the beans cool in the water for 2 minutes, then drain well.
3. Once the farro has cooled, add the green beans, olives, bell pepper, Parmesan cheese, and chives. Stir to combine.
4. In a small bowl, mix together the sherry vinegar, olive oil, mustard, pepper, and the remaining 1/2 tsp salt. Stir to combine and pour sherry vinaigrette over the farro salad. Toss to combine and serve.

2 tsp kosher salt
½ lb green beans, trimmed and cut into 1-2 inch pieces
½ cup pitted black olives
1 medium red bell pepper, cut into thin strips
¾ cup parmesan cheese, crumbled
¼ cup snipped fresh chives
¼ cup sherry vinegar
¼ cup extra-virgin olive oil
1 tbsp Dijon mustard
1 tsp freshly ground black pepper

COOK TIME - 35 minutes
TOTAL TIME - 40 minutes
